What’s Cooking: Trout Grilled With Wild Rice

WHAT YOU NEED: 1 tablespoon olive oil 1 clove garlic, crushed 4 cups water 1/2 cup uncooked wild rice 1/4 teaspoon salt, divided 1/4 teaspoon pepper, divided 4 thyme sprigs 4 cleaned trout (8-ounce) 1 tablespoon butter 1 tablespoon chopped fresh parsley STEPS: Heat oil in a medium saucepan over medium-high heat. Add garlic and sauté 3 minutes. Add water, rice, 1/8 teaspoon salt, 1/8 teaspoon pepper and bring to a boil. Cover, reduce heat, and simmer 50 minutes or until rice is tender. Drain rice, reserving 1 cup cooking liquid and set rice aside. Return cooking liquid to pan. …
